New Recipe: Baked Oatmeal


The joy of slowing down and having a morning to bake. Baked oatmeal is a great alternative to overnight oats when you have the time. This is also a great dish for breakfast/brunch or to make ahead for the week when meal prepping.


If you are ready to dive in and make this recipe, here’s how:


You will need the following ingredients:


1 1/2 medium ripe bananas sliced

1 1/2 cup blueberries

1/4 cup honey

1 cup uncooked quick or old fashion gluten free oats

1/4 cup chopped almonds

1/2 tsp baking powder

3/4 tsp cinnamon

1 cup almond milk

1 large egg

1 tsp vanilla extract


Once you have all the ingredients, you are ready to start baking.

Preheat your oven to 375F. Lightly spray baking dish with cooking spray.

Arrange the banana slices in a single layer on the bottom of your baking dish. Sprinkle blueberries over the bananas. Add 1/4 tsp of the cinnamon, 1 tbsp of the honey and cover with foil.


Bake for 15 minutes, until the bananas get soft.


While baking the bananas and blueberries in a medium bowl, combine the oats, half of almonds, baking powder, and cinnamon; stir together.


In a separate bowl, whisk together honey, milk, egg, and vanilla extract.


At this time your bananas and blueberries should be ready, remove baking pan from the oven, then pour the oat mixture over the bananas and blueberries.


Next pour the almond milk mixture over the oats, making sure to distribute the mixture as evenly as possible over the oats. Sprinkle more blueberries over the the top. Bake for 30 minutes.

Serve warm and enjoy!
